Vegan lemongrass mock chicken style

Try this fuss-free asian style plant based recipe to make under 30 minutes.

My version of Vietnamese one-pot vegan chicken-style dish is an aromatic blend of lemongrass, chilli and sauce main meal. It’s fast and easy dish that you can make during the week.

If you use dehydrated soy chunks it is also gluten free.


1Tbsp dried Lemongrass (or fresh lemongrass stalks)

3 chopped garlic cloves

½ piece of fresh root ginger, chopped or grated

½ tbsp brown sugar

1 tbsp soy sauce

1 Tbsp cashews

1 small red pepper

1 small yellow pepper

1 onion

1 pack of vegan chicken-style pieces

or soaked and drained soy chunks or chicken seitan

2 tbsp groundnut or sunflower oil

1 red chilli, sliced

1 lime, juice

1 pinch of fresh parsley

salt, to taste

1 pinch of black pepper

olive oil
